Simple and
Easy Bean Recipes

Beef and Mushroom Green Bean Dish
1 lb. green beans, washed, stemmed and cut into 1 1/4-inch pieces
1/2 lb. mushrooms, sliced
3/4 lb. beef, sliced or cubed (sirloin or top round)
1 Tbsp. soy sauce
1 tsp. cornstarch
1 clove garlic
2 Tbsp. salad oil
2 tsp. butter or margarine

Prepare beans and mushrooms; set aside. Slice or cut up meat and place in a
bowl. Combine soy sauce, cornstarch and garlic; pour over meat and mix. Heat
wok or nonstick skillet until piping hot; add 1 tablespoon oil and 1
tablespoon butter. Add green beans and salt. Cook quickly, stirring until
beans are bright green and crispy-tender. Set aside to keep hot. Add
remaining oil, butter, mushrooms and beef. Cook quickly,
stirring until desired doneness. Add green beans and toss to mix. Serve at
once with hot buttered rice.
