Simple and Easy Bean Recipes
Red bean, navy bean, pinto bean, green bean, black bean, lima bean, white bean recipes that have been collected from box tops, cans, newspapers, magazines and friends over the years.


 

Broccoli and Green Beans

1 bunch (about 2 lb.) broccoli
or 2 pkg. frozen broccoli
2 (10 oz.) pkg. frozen cut
green beans
1 Tbsp. sugar
1 Tbsp. cornstarch
1 Tbsp. soy sauce
1 c. chicken broth
1/2 lb. mushrooms, sliced
1 c. vegetable oil
1/2 tsp. salt
1 shallot or several green
onion tops, minced
1/4 c. white wine

Cut off broccoli stems just below flowerets; split flowerets into roughly equal size (if you are using frozen broccoli, thaw and cut into equal size). Thaw green beans (use French-style green beans). Mix sugar, cornstarch, soy sauce and chicken broth in small bowl; set aside.

Heat vegetable oil, salt and minced shallots in a large skillet (with a lid) or you could use a wok or electric frypan.

When shallots start to turn brown, add onions, green beans and broccoli. Saute, stirring constantly, until broccoli is beginning to get tender. Add sliced mushrooms and white wine. Cover and cook for about 3 minutes or until broccoli is tender. Uncover and add sugar-cornstarch mixture. Stir and cook until sauce is thickened. Beans and broccoli should still be bright green.
Serves 8 to 10.
