Simple and
Easy Bean Recipes

Dilly Green Beans
2 lb. green beans
1 Tbsp. salt to qt. of water
4 c. white vinegar
1 c. sugar
3 Tbsp. pickling spices tied
in bag
2 garlic cloves
fresh or dried dill tops
Wash beans well. Snip off tops. Cut beans to fit depth of jars. Cover beans
with water and let stand 30 minutes.
Drain. Make brine to cover, using 1 tablespoon salt to each quart of water.
Place beans and brine in saucepan; bring to boil. Boil 20 minutes or until
tender. Drain well. Place beans back in saucepan and add vinegar, sugar,
spice-bag and garlic. Simmer 10 minutes. Place beans upright in hot sterile
jars. Cover with hot vinegar solution. Place dill top in jar. Place on
sterilized jar lids, screw tight. Process in water bath for 10 minutes.
Makes 4 pints..
