Simple and Easy Bean Recipes
Red bean, navy bean, pinto bean, green bean, black bean, lima bean, white bean recipes that have been collected from box tops, cans, newspapers, magazines and friends over the years.


Green Bean and Tomato Dish

1 lb. green beans or 2 (10 oz.) pkg. frozen French beans, defrosted
2 medium onions, coarsely grated
2 c. water
2 medium tomatoes, halved
1/4 c. olive or salad oil
1/2 tsp. sugar
salt to taste

If fresh beans are used, remove strings from them and wash. Cut lengthwise in two. Place beans and onions in a
saucepan. Add 1 cup of water, cover with wax paper, then cover the pot and cook for 30 minutes on medium heat. Remove wax paper, place tomato halves on top of beans and add oil, sugar and salt. Add 1 cup of water. Replace wax paper, cover and cook for another 30 minutes. If necessary, a little more water may be added. If frozen beans are used, place beans and onions in a saucepan. Place tomato halves on top of beans. Add oil,
sugar, salt and 1 cup of water. Cover beans with wax paper.

Place lid on saucepan. Cook for 40 minutes over medium heat. If necessary, a little more water may be added. Remove from heat. Transfer tomato slices carefully into a dish. Empty beans into a serving platter, placing tomato halves on top of beans. Allow to cool. Serve cold as an appetizer or salad.
Serves 4 to 5.
