Easter Egg Dye
1/4 tsp. food color
3/4 c. boiling water for each color
1 tbsp. vinegar for each color
For each color, measure food color, water and vinegar into bowl about size
of a cereal bowl. Mix well with spoon, use separate spoon for each color. To
make orange dye: mix equal amounts of red and yellow. To make purple dye,
mix blue and red. To make green dye mix blue and yellow.
Natural Easter Egg Dye
1 tsp. vinegar
Cold water
Eggs
Red cabbage - bright blue
Orange peels - light yellow
Light onion shells - yellow
Dark onion shells - brown
Carrot tops - yellow green
Celery top - light yellow green
Red beets - red
For varied shades of purple and other secondary colors combine 2 or 3 of
above ingredients together. Place uncooked eggs in a single layer at bottom
of saucepan; cover eggs with cold water, add vinegar and ingredients for
desired colors. Bring to a boil. Reduce heat; simmer 20 minutes, remove tops
or peels from the pan and let stand overnight to produce a darker color,
rinse and dry. Using packaged dyes: Put eggs in saucepan and cover with cold
water; add vinegar. Bring to a boil over medium heat; remove pan from heat,
cover and let stand 15 minutes, rinse with cold water and drain. Wipe dry
and dye according to package.
NOTE: Never cover your saucepan with a lid, cook or boil any longer than
required time. This may cause your eggs to be overcooked and forms a
greenish colored yolk.

EASTER ROLLS
2 pkg. dry yeast with 1/2 c. warm water
2/3 c. margarine
2/3 c. sugar
1 1/2 c. hot water
2 beaten eggs
1 tsp. salt
6 c. flour
Mix yeast with 1/2 cup water. Cream together margarine and sugar. Add yeast
to water, eggs, salt, margarine and sugar. Add flour until goopy. Cover with
towel 2 hours. Punch once in middle. Cover with plastic wrap. Refrigerate
overnight. Shape into rolls. Let rise 30 minutes in greased muffin pans.
Bake at 375 degrees for 15-20 minutes.
POTATO
CANDY EASTER EGGS
1 c. mashed potatoes
2 boxes powdered sugar
1/2 c. chopped nuts
1/2 jar maraschino cherries, well
drained
Mix sugar in potatoes. Add nuts and cherries, when it gets stiff form into
eggs. Mix 1 pound chocolate bits with a few drops of water. Melt, pour over
eggs.
CRISPY
EASTER NESTS
1 (7 oz.) jar marshmallow creme (about 2 c.)
1/4 c. creamy peanut butter
2 tbsp. margarine, melted
1 (5 oz.) can chow mein noodles
(about 3 c.)
1 c. chopped plain M&M's or chocolate
chips
M&M peanut chocolates
Combine marshmallow creme, peanut butter and butter; mix until well blended.
Add noodles and plain M&M's or chocolate chips. Mix well. Drop by 1/3
cupfuls onto greased cookie sheet; shape with greased fingers to form nests.
Let stand until firm. Dust bottom of nests lightly with confectioners'
sugar, if desired. Fill with peanut M&M's chocolate before serving. Makes 10
to 12 nests.
SWEET
POTATO CASSEROLE
4 c. sweet potato, cooked and mashed
1 tbsp. vanilla
2 eggs
1 c. white sugar
1 1/2 c. melted margarine
Mix well put into 9 x 13 pan.
TOPPING
1 c. brown sugar
1/2 c. flour
1 c. nuts (pecans)
1/2 c. butter
Mix until crumbly, put on top of sweet potatoes. Bake at 350 degree oven for
30 to 35 minutes.
SWEET POTATO CASSEROLE
1 (16 oz.) can sweet potatoes
1/2 c. brown sugar
1/4 tsp. salt
1/2 tsp. cinnamon
1 egg, beaten
4 tbsp. melted butter
1 pkg. marshmallows
Butter baking dish. Place 1/2 of mixture in dish. Dot with marshmallows,
then add remaining mixture. Bake at 350 degrees for 30 minutes. Remove from
oven, dot top with marshmallows and replace in oven about 10 minutes or
until brown.
AMBROSIA FRUIT SALAD
1 can (20 oz.) pineapple chunks in juice
1 can (11 oz.) mandarin orange segments
1 banana, peeled, sliced
1-1/2 c. seedless grapes
1 c. mini marshmallows
1/2 c. flaked coconut
1/4 c. chopped almonds
1 carton (8 oz.) vanilla yogurt
Drain pineapple and oranges. Use juice as beverage. Combine pineapple,
oranges, banana, grapes, marshmallows, coconut and almonds. Fold in yogurt.
Chill.
GREEN BEAN CASSEROLE
2 boxes frozen French style green beans (thawed)
1 med. onion, chopped
Butter
1 c. sliced water chestnuts
1 c. shredded cheese
1 can mushroom soup
1 can French fried onion rings
Saute onions in butter. Layer in a greased casserole: 1. Beans 2. Onions 3.
Water chestnuts 4. Cheese 5. Mushroom soup 6. Repeat layers Bake 25 minutes
at 350 degrees or until heated through. Add onion rings the last 5 minutes.
Serves 6.

BROWN POTATO CASSEROLE
2 lb. pkg. frozen hash browns, thawed
1-1/2 sticks butter, melted
1 c. chopped onion
1 can cream of chicken soup, undiluted
8 oz. carton sour cream
2 c. shredded cheddar cheese
2 c. corn flakes
Garlic salt to taste (opt.)
Combine potatoes, 1 stick melted butter, onions, soup, sour cream and
cheese, stir well. Spoon into greased 2 1/2 quart casserole. Crush cereal
and stir in 1/2 stick melted butter. Sprinkle over casserole. Bake at 350
degrees for 1 hour. Garnish with parsley, if desired. Baking dish 11 3/4 x 7
1/2 x 1 3/4 inches may also be used.
