PEAR SUNDAE CAKE

2-1/4 c. vanilla ice milk, softened or dietetic ice milk
1 tsp. apple pie spice, divided
1 baking apple, peeled, cored & sliced
1 pear, peeled, cored & sliced
2 tsp. lemon juice
1 c. all-purpose flour
1/2 c. unsweetened apple juice
2 tbsp. sugar
1 egg
1 tsp. baking powder
1/2 tsp. salt
1/4 c. firmly packed brown sugar
2 tbsp. pecans, chopped
2 tbsp. raisins, chopped
1 c. boiling water

Combine ice milk and 1/2 teaspoon apple pie spice in a bowl. Freeze until firm. Arrange apple and pear slices in bottom of an ungreased 9 inch square baking pan; sprinkle with lemon juice and set aside. Combine flour, apple juice, sugar, egg, baking powder and salt in a bowl. Beat with electric mixer until smooth. Spoon batter over the fruit slices. Combine brown sugar, pecans, raisins and remaining 1/2 teaspoon of apple pie spice in a small bowl. Sprinkle over batter. Pour boiling water over batter in a slow steady stream. Bake at 375 degrees for 30 minutes. Let cool and cut into squares. Serve on individual plates topped with ice milk mixture.
