Sauteed Veal and Peppers
1 lb. veal cutlets
2 Tbsp. butter
1 Tbsp. oil
1 red pepper (cut in strips)
1/4 c. sliced onion
1 clove garlic (minced)
1/4 tsp. salt
1/8 tsp. pepper
1/4 c. Marsala wine
1/4 c. beef broth
2 Tbsp. chopped parsley
Pound veal very thin (approximately 1/4-inch). Heat butter and
oil in large skillet until butter is melted. Add veal, cook 1 to
2 minutes on each side (should be lightly
browned). Remove to serving platter, cover and keep warm. Add
red pepper, onion, garlic, salt and pepper to skillet. Cook
until soft (5 minutes). Add Marsala and beef
broth, bring to boil. Cook, stirring 2 or 3 minutes. Pour over
veal, sprinkle with parsley.s
