Veal Parmigiana

2 lb. veal cutlets
1 beaten egg
3/4 c. bread crumbs
1/3 c. Parmesan cheese
1/4 tsp. salt
8 slices (1 oz. each)
Mozzarella cheese
dash of pepper
1/8 tsp. oregano
olive oil
8 oz. can tomato sauce
1/3 c. asiago cheese (if you
can't find, use Parmesan)

Dip veal in beaten egg. Combine bread crumbs, grated Parmesan cheese, salt, pepper and oregano. Coat veal with mixture. Saute veal slices in oil until brown. Place in shallow baking dish. Pour tomato sauce over veal cutlets and sprinkle with cheese. Top with slices of Mozzarella cheese. Bake at 375 degrees about 20 minutes.
Serves 8 to 10.
