Grandma's Beet Cake

1 pound beets, drained and mashed fine, set aside (beets canned in water)
2 cup all-purpose flour
2 cup sugar
3 eggs
1 teaspoon soda
1 teaspoon vanilla
3/4 teaspoon salt
1/2 cup black walnuts, chopped
1 1/4 cup vegetable oil

Combine all ingredients except oil and beets. After mixing ingredients, add oil. Then
fold in beets. Grease and flour a 9 x 13-inch pan. Bake in preheated oven at 325
degrees for 60 to 70 minutes.

Beet Cake Topping:
1 stick butter
4 tsp. cocoa
6 tsp. canned milk
1 tsp. vanilla
1 tsp. cinnamon
1 box powdered sugar
1/2 c. black walnuts, chopped

Bring butter, cocoa, milk, vanilla and cinnamon to a boil, then add sugar and nuts. As
soon as you take the cake out of the oven, spread topping on cake.
