Stuffed Beet Salad
6 cooked whole fresh beets (2 inches in diameter) (peeled with
centered cut out)
1/4 cup French dressing (oil and vinegar type)
3/4 teaspoon powdered mustard
2 large hard-cooked eggs, diced
1 tablespoon pickle relish
salt to taste
3/4 tsp. black pepper
2 Tbsp. mayonnaise
Peel beets and cut out the centers, leaving beet cups with walls
1/2-inch thick. Save centers for later use. Marinate beet cups
in French dressing several hours or over
night. Combine mustard with 2 teaspoons of water and let stand
for 10 minutes to develop the flavor. Mix with eggs, beet
centers, pickle relish, salt, black pepper and
mayonnaise. Spoon the mixture into the beet cups.
This makes 6 servings.
